Ceviche & Co., the food truck serving breakfast and lunch options outside Building 67, launched an expanded menu on April 22 in response to Lab employee feedback. Among the updates:

• New veggie burrito and veggie tacos options which can be ordered with Beyond Meat or one of the standard protein options
• Beyond Meat added as a protein option for any dish
• Expanded grab and go options, including burritos, wraps, muffins, and parfaits

These new items are in addition to the truck’s regular menu, which includes a daily ceviche (of course), fish and chips, empanadas, tacos, burrito bowls, quesadillas, and nachos. Breakfast options include oatmeal, egg and cheese sandwiches, fruit cups, and berry parfaits. The Ceviche team invites everyone to come try out their expanded menu. And if you are looking for a tried and true favorite, the birria tacos are made from a recipe created by one of the staff.

Ceviche & Co. operates out of Lot S, near Building 67, weekdays from 8 a.m. to 2 p.m. The online menu is currently being updated, but all the options are available when you order in person.
